Being a tradition with roots in Scandinavia, we celebrate «The International Waffle Day» with The Norwegian trainer Benedicte Engen´s Viking Waffles. This version is one of Engen´s favourites, named «chocolate chip waffles», it´s gluten free, full of protein and super tasty!
Use it as a source of protein after a workout, or merely as a Saturday night treat.

Recipe for 6 waffles (feel free to supersize that ...)
- 2 eggs
- 2 table spoons of coconut oil
- 360 g almond milk
- 120 g gluten free flour mix (optionally oat flour)
- 80 g oat flour
- 2 tea spoons baking soda
- 1 tea spoon vanilla essence
- 2 scoops of vanilla protein powder
- 90 g sugar free and cut chocolate bites
